Easy Alur Porota Recipe

We Indians have thousands (probably undermining the number here) of food options. From breakfast to dinner, we like to keep our dishes flavourful. One such tasty and people's favourite is the आलू पराठा or Aloo paratha.

In Bengal, we call this popular dish আলুর পরোটা or Alur porota. You will find this dish has a crispy texture outside but is filled with savoury filling on mashed potatoes. Alur porta is a traditional breakfast and tastes the best when made at home with love. So, without any further adieu, let's dive straight into the ingredients and explore the easy alur porota recipe.


Ingredients

For the dough:

  • Wheat flour (150 gm)

  • Flour (150 gm)

  • Salt

  • Water

For the filling:

  • 2 Potatoes

  • 1 Green chili

  • 2½ teaspoon salt

  • 1 teaspoon turmeric

  • 1 teaspoon Kashmiri Lal Mirch powder

  • 1 teaspoon Bhaja masala or Roasted masala

  • ¼ cup of Lime juice

  • 1-2 Strands of Coriander leaves


Easy Bengali Alur Porota Recipe

Knead a dough by mixing equal measurements of wheat flour and normal flour. Also, add a teaspoon of salt. After that, gradually add water to make the dough soft. You have to keep it in a bowl with a lid on. Let it rest for 2-3 hours.


For the filling, take two potatoes. Wash them thoroughly and boil them in a pressure cooker on medium heat.


Wait till the first whistle to turn off the oven. Now, strain the potatoes and set them aside to cool the temperature. After the cooling down process, peel the potatoes. Take another bowl and add the following:

  • 2½ teaspoons of salt

  • 1 teaspoon of turmeric

  • 1 teaspoon of Kashmiri lal mirch and bhaja masala each

  • Chopped coriander

  • The boiled potatoes and ¼ cup lime juice

Mix it properly but don't mash it too much. It should look like as shown in the picture below.

Now take the dough and cut it into two halves. Roll one half to make the dough round. It won't be totally round but that's fine. Make space to add the mashed potatoes. Take as much of the filling as you want.

Roll it up like a ball and make it round. Put the filling inside the hollow space you created earlier. Use a roller pin to flatten the dough ball. Roll it well till you are satisfied with the shape.


Turn on the stove/oven and let the pan heat for 5-6mins on medium flame. Place the alur porota on the pan of your choice and heat it well without oil.

Add two tablespoons of oil to cook one side. Flip it and add 1-2 tablespoons of more oil for the other side to cook.


Now, take the porota from the pan and serve it with a sauce or chutney.


Flavourful Choice: You can also add butter if you want.
